The ideal way to kick off a year of healthy eating is this simple Pad Thai with salmon.
300g salmon fillets skinned and cut into 1 cubes
2 cloves garlic crushed
1 red chilli, deseeded and finely sliced
400g flat rice noodles
2 eggs beaten
2 tbsp soy sauce
1 tbsp tamarind paste
1 tbsp soft brown sugar
Juice 1 lime
100g bean sprouts
4 spring onions, sliced
30g salted peanuts
1. Cook the noodles to the packets instructions then drain and set to one side.
2. Fry off the cubed salmon in a large non-stick pan or wok for 2-3 minutes, add in the garlic and chilli and cook for a further minute turn up the heat,
3. Add the prawns and fry for a minute, toss in the noodles, push to one side of the pan then add the beaten eggs, cook for around 10 seconds and then fold the egg into the noodles.
4. Pour in the soy, tamarind paste, sugar and lime juice. Finally add the beansprouts and spring onions, cook for a further minute, and serve with some peanuts, fresh coriander and another lime wedge on the side.
