James Tanner cooks up super simple pancakes that can be either sweet or savoury.
100g plain flour
1 tsp baking powder
1. Sieve the flour and baking powder into a bowl add the egg and the milk and whisk together, until you have a thick mixture.
For sweet pancakes:
Add a handful of blueberries and fold into the mix, heat a non stick frying pan to a medium heat with a splash of vegetable oil and cook the pancakes in batches, spoon two tbsp of mixture into the pan and cook for a minute flip and cook for a further minute the pancakes should be golden brown. Stack up on serving plates and dust with icing sugar and scatter over remaining blueberries or berries of your choice and drizzle over some maple syrup.
For savory pancakes:
Serve with crispy bacon, sausage or sausage patties and hash browns and cooked eggs of your choice, traditionally true American style serve with maple syrup.
