Give one of our favourite comfort dishes a twist with Dean's smokey mac and cheese that's bursting full of big flavour!
350g macaroni pasta
1 red onion, finely diced
1 clove garlic, crushed
1 tsp smoked paprika
3 rashers smoked streaky bacon sliced into lardons
1 410g tin evaporated milk
80ml tomato ketchup
100g sunblush or sundried tomatoes, chopped
150g cheddar cheese
Couple of drops of hot sauce
1. Cook the macaroni to the packet's instructions, drain and transfer to a large oven proof baking dish.
2. Fry off the onion and garlic in some oil for around 5 minutes until softened, then add the bacon and paprika and cook until golden. Add in the evaporated milk, ketchup, tomatoes and 2/3 of the grated cheese and stir until the cheese has melted. Season and add a couple of drops of hot sauce to taste.
3. Pour the sauce over the pasta, making sure it's well combined, then sprinkle with the remaining
cheese and breadcrumbs. Bake in a pre heated oven set at 200c /180c fan /
gas mark 6 for 30 minutes.
4. Leave to stand for 5 mins before serving with a crisp salad and some crusty bread.
