Dean brings us a tasty budget buster in the form of his cheap and easy spicy cottage pie!

Ingredients

500g minced beef £2.84
1 large onion diced 33p
2 carrots peeled and diced 16p
2 cloves garlic crushed 7.5p
2 tbs garam masala 28p
½ tsp cumin 5p
1 tbs plain flour 2p
400ml beef stock 20p
1 tbsp tomato puree 5p
250g parsnips peeled and cubed 43p
300g potatoes 30p
1 tsp ground cumin 10p

Method

1. Peel and chop the parsnips and potatoes into even sized pieces, boil in salted water until tender, drain then leave in the colander until cooled slightly (this will ensure the potatoes are not wet when you start to mash). Mash or pass through a ricer then season with the cumin and a generous pinch of salt and pepper.

2. In a large pan, fry the onion, carrot and garlic in some oil for around 5-6 minutes until softened. Add the spices and flour then cook for a further minute. Meanwhile in a large frying pan brown the mince, add to the vegetables, pour in the stock and tomato puree then simmer for 10 minutes. Season with salt and pepper.

3. Transfer the mince into an ovenproof baking dish and top with the parsnip and potato mash, texture with a fork. Place in a preheated oven set at 200C/180C fan for 30 minutes or until the top has browned.
