It's Monday and we're feeling the pinch after splurging at the weekend, so James Tanner's showing us how we can keep an eye on the pennies but not skimp on rich flavour.
This whole dish costs £4.19 which is just over a pound per person for 4 people.
8 pork and herb sausages
1 can of baked beans
1 can kidney beans rinsed and drained
3 slices of smoked bacon, diced
1 medium onions, diced
1/2 tablespoon of chilli powder or 1 tbsp if you like it spicy hot!
3 tablespoon Worcestershire sauce
1 tablespoon of dark soy sauce
2 tablespoon of white wine vinegar
2 cloves garlic crushed
3 sprigs of thyme
100g brown sugar
200ml chicken stock
1 small red chilli, diced
Salt and pepper to taste
2 tablespoons of olive oil
Plain rice to serve boiled for 10 -12 minutes until just tender.
1 tbsp chopped coriander optional as garnish.
1. Place a large casserole dish (approx 3.5ltr) on a medium heat. Add 1 tbsp olive oil and sear sausages for 1 minute all over.
2. Next add the bacon and cook for 1 minute until coloured then add the onion, chilli powder, (chopped chilli) and garlic and cook for another minute to soften.
3. Add all the remaining ingredients and stir the mixture together. Put a lid on the casserole dish and cook gently, stirring occasionally for 10-12 minutes.
4. Serve in bowls with fluffy rice and scatter with chopped coriander if desired.
