Nadia Sawalha's recipe for a hearty and healthy soup which is literally a life saver for hungry girls - as seen in last year's Hungry Girls Little Black Dress Diet.
Half a tbsp olive oil
1 medium onion, chopped
2 garlic cloves, chopped
1 heaped tsp of curry powder
½ a head of celery
A whole head of broccoli
2 medium potatoes, cut into small cubes
A mugful of petit pois
1.5 litres boiling water
1.5 chicken stock pots (jelly stock)
Heat the oil and then gently cook the onion, celery and garlic and curry powder until really nice and soft but NOT browned.
Chop up the stalks from the broccoli and the potatoes and cook until tender for 8-10 minutes and then add the broccoli florets .
Pour in the boiling water and stock and cook for a couple of minutes. Add the petit pois and cook until they are just tender.
