KAYE: I learned to make cheese sauce in home economics class some time before Parmesan was discovered in Scotland. It had a rather grey tinge. So Nadia’s recipe is now my go-to. I took a lot of convincing to warm the milk rather than grab it out of the fridge, but it does make a difference.
