Try this simple and healthy salmon served with a fresh avocado and cucumber salsa.
110-150g / 4-5oz salmon fillets
2tbsp extra virgin olive oil
2tbsp freshly squeezed lemon juice
3 garlic cloves, minced
Black pepper to taste
For the salsa:
110g cucumber peeled and sliced
35g red onion, finely diced
1 jalapeno pepper, seeded and minced
55g tomatoes, diced
1tbsp freshly squeezed lime juice
¼ tsp chili pepper flakes
60ml/2fl oz rice vinegar
30g/1oz fresh coriander, roughly chopped
2tbsp extra virgin olive oil]
1 avocado peeled and cubed
1. In a small bowl, combine the olive oil, lemon juice and garlic.
2. Add some pepper and rub the mixture over the fillets. Cover and refrigerate for 1-2 hours. Grill on a hot grill for 3-4 minutes per side or until just cooked.
3. Prepare the salsa ahead of time by simply tossing and mixing the ingredients together.
