3 egg whites
1 tbsp olive oil
You can add spinach, mushrooms or red or yellow peppers
1. Separate the egg whites. In a medium bowl, whisk the egg whites together, add black pepper and keep whisking until they are frothy.
2. Lightly coat a medium non-stick pan with the olive oil and heat over a medium heat. Add a quarter of the egg whites, swirling the pan to evenly cover the bottom. Cook until set for a bout one and a half to two minutes.
3. Lift the eggs and let the runny uncooked egg flow underneath.
4. If using added ingredients, spoon quarter of the spinach mixture/peppers or mushrooms, fried in one teaspoon of olive oil, onto half of the omelette, fold and place onto a serving plate.
