Try this tasty chicken coated in honey mustard and sesame seeds.
Serves 2
Ingredients:
2 small to medium chicken breasts, skin removed
90g/3oz honey mustard
1 tsp mustard powder
1 tsp water
1/2 tsp ground black pepper
55g/2oz sesame seeds
1 tbsp extra virgin olive oil
Method:
1. In a medium bowl, combine the pepper and sesame seeds.
2. Mix the mustard powder and water together until well combined and stir together with the honey mustard.
3. Pound the chicken until thin then coat with the mustard mix. Press each breast evenly into the seed mixture, coating both sides.
4. Heat a griddle pan over a medium heat, add the olive oil and cook each breast on both sides, being careful to turn to keep the seed crust intact, until the sesame seeds turn golden brown and the chicken is cooked through. Serve hot.
