A super healthy salad with mixed leaves, avocado and raspberry vinaigrette.
330g mixed salad leaves
2 tbsp raspberry vinegar (or balsamic vinegar)
1 tbsp extra virgin olive oil
½ tsp granulated sugar
½ avocado (or you can use mandarin, papaya or mango)
1. Peel the avocado and cut lengthways to make approximately 8 slices and add to the salad.
2. Combine the vinegar, oil and sugar and drizzle over the mixed greens. Toss the salad.
