French toast is usually a decadent treat, but by using wholewheat bread and skimmed milk you can have this much healthier version instead!
4 slices wholewheat bread 1” thick
2 eggs, beaten
½ tsp ground cinnamon
50ml skimmed milk
1 tsp caster sugar
1 tsp unsalted butter
250g strawberries, hulled and halved
4 tbs low fat natural yoghurt
1. Place the eggs, milk, cinnamon and sugar into a bowl then mix together, pour into a shallow baking dish then lay in the sliced bread, leave to soak up for a couple of minutes before turning, leave to sit for a few more minutes.
2. Warm a large non stick pan before adding the butter, lay in the bread and cook over a medium heat for around two minutes or until golden, flip then cook the other side.
3. Top the French toast with a heap of strawberries then top each one with a tablespoon of yoghurt and finally a light dusting of icing sugar.
