Tuck into a tasty tortilla with delicious fresh asparagus for a filling and nutritious meal.

1 bunch asparagus
1 red onion sliced
1 courgette thinly sliced
2 cloves garlic crushed
6 med eggs beaten
2 small sweet potatoes
1 tbs oilve oil
- Par boil the sweet potato wedges for 5 mins, drain then place into a bowl then coat with the oil. Place on a baking tray, season and bake at 200c / gas mark 6 for around 30 minutes.
- Plunge the asparagus into boiling salted water, bring back to the boil then cook for 2-3 minutes, drain then set aside.
- In a non stick pan fry the sliced courgette in 1 tbs oil then add the garlic and cook over a med heat until golden, this will take around 6-7 minutes, add the the onion then cook until softened. Place the asparagus into the pan then add the seasoned beaten eggs then cook until the eggs have just set around the edges transfer to a pre heated oven set at 200c / gas mark 6 for around 6-8 minutes, turn out onto a plate.
- Cut the tortilla into slices then serve with the wedges.
