4 organic free-range eggs
100g smoked salmon
100g fresh spinach
20g Parmesan cheese
1. Wilt the spinach in a large pan then squeeze out the excess water, set aside.
2. Place the salmon and spinach into the bottom of four ramekins then crack an egg into each one, being careful not to break the yolk. Top with the grated Parmesan and season.
3. Pre-heat the oven to 180c / gas mark 4, then Place the ramekins onto a baking tray, fill halfway up with boiling water and bake in the oven for 8 to 10 minutes or until the whites are set.
