A bowl of sweet potato soup will spice up your mealtime with a tantalising taste of the Caribbean.

400g sweet potatoes peeled and diced
1 large carrot peeled and diced
1 large onion diced
3 cloves garlic chopped
1 thumbsized piece fresh ginger roughly chopped
½ red chilli deseeded
3 sprigs fresh thyme
½ tsp cinnamon
½ tsp all spice
1 ½ pts chicken stock
Juice 1 lime
- Place the sweet potatoes, carrot, onion, garlic, chilli, thyme and ginger in a large saucepan along with a dash of oil and sweat for 10 mins until softened slightly, add in the spices and cook for a further minute. Pour in the stock and quinoa, bring up to the boil then cover with a lid and simmer over a low heat for 30 minutes.
- Leave to cool slightly before blitzing to a smooth consistency. Season with salt, pepper and a good squeeze of lime. Garnish with some coriander.
