Dine on a filling, spicy pasta dish that will impress any dinner guest.

200g raw prawns
120g linguine pasta
½ red onion diced
1 clove garlic crushed
1 red chilli deseeded and finely diced
2 tbs flat leaf parsley chopped
1 tbs low fat crème fraiche
Juice ½ a lemon
Large handful rocket
- Cook the linguine in boiling salted water according to the packets instructions, drain and set aside.
- In some olive oil fry the prawns for 2-3 minutes until starting to turn pink then add the onion, garlic and chilli then cook for a further two minutes.
- Finally stir through the crème fraiche and a good squeeze of lemon juice, season with salt and pepper.
- Add the pasta to the pan along with the rocket, toss in the sauce, serve with a couple of lemon wedges.
