½ Red cabbage shredded
1 small red onion very finely sliced
1 carrot grated
1 apple grated
2 tbs flat leaf parsley finely chopped
100ml low fat natural yoghurt
1 tsp wholegrain mustard
Juice ½ lemon
Place the cabbage, onion, carrot, apple and parsley to a bowl and mix, add the yoghurt, mustard and lemon juice then combine. Season with salt and pepper.
