This omelette is a great way to start the day - It tastes great and will keep you filled up until lunch!
1 whole egg
2 egg whites
1 slice ham torn
50g chestnut mushrooms sliced
50g baby spinach
1 tbs rapeseed oil
1. Whisk the egg and egg whites together then season.
2. Place the mushrooms in a non stick pan and cook for a couple of minutes with the oil before adding the spinach and wilting for a further minute, pour in the eggs and start to cook. Scatter over the ham then cook through.
3. Turn out onto a plate and enjoy.
