With less than 500 calories per serving and less than 5g of fat, this turkey bolognese is totally guilt-free!
500g lean turkey mince
1 large onion, finely diced
1 large carrot, diced into small pieces
2 stalks celery, diced into small pieces
100g mushrooms, sliced
4 cloves garlic, crushed
1 500g carton tomato passata
1 tbsp dried oregano
300ml beef stock
1 tbsp tomato puree
240g wholemeal spaghetti pasta
10-12 fresh basil leaves torn
1. Put the onion, carrot and celery into a large pan and cook for 5-6 mins over a medium heat with a small dash of oil.
2. Add the mince and garlic and cook for a couple of minutes before pouring in the tomato passata, puree, stock, mushrooms and oregano then stir to combine. Bring up to a simmer then cover then cook over a low heat for 1 hour, then season with salt and pepper.
3. Cook the pasta to the packet's instructions, drain, then toss through the sauce before serving with some freshly torn basil.
4. Serve with a side salad.
