Try this lean version of koftas with tabbouleh as part of the Miami Beach Diet - only 333 calories per serving.
500g lean turkey breast mince
3 cloves garlic, crushed
2 tbs flat leaf parsley, chopped
1 tsp ground cumin
Zest of ½ a lemon
80g cherry tomatoes
3 spring onions, finely sliced
2 tbsp fresh mint chopped
2 tbsp fresh parsley chopped
Juice ½ lemon
Arils from ½ pomegranate
1. Mix the turkey mince along with the garlic, cumin, lemon zest and parsley then season with salt and pepper. Shape onto some pre soaked skewers then chill down for 20 mins. Cook the koftas under a pre heated grill set at a medium heat for 12-14 minutes, or until cooked through.
2. Cook the quinoa for around 15 minutes in salted boiling water until cooked then drain.
3. Add the quinoa to the rest of the ingredients, season and serve with the koftas.
4. Serve with some roasted vegetables as a side dish.
