As brewery manager at Woodforde's, what Bruce doesn't know about beer you could write on the back of a beer mat.
His keen eye and an experienced palette isn't restricted, though, to brewing. Bruce has just become one of only 29 beer Sommeliers in the country - that means he's an expert at matching beer with fine food.
Bruce's status as Sommelier came after a gruelling year of exams.
"I know it sounds a bit of a joke but I had to test all these beers, which was obviously a hardship. And we had an exam at the end. Then there was the advance course when you had to learn more about beer styles and beer origins."
"Do you find that knowing so much about beer detracts from your enjoyment of just having a pint?"
"Luckily that'll never leave me, I'll always enjoy having a pint, that's fine"
