The 46-year-old has left Premier League club West Bromwich Albion to take up the role.
During his three years with the Baggies, Oldfield has helped to develop players such as Saido Berahino and George Thorne.
"We’re delighted to have secured the signature of someone of his stature,” Executive Director Andrew Cullen told the club's official wesbite.
“It’s a role we have been doing due diligence on and it’s an appointment which took time as we wanted to find an outstanding candidate with strong credentials - David fits the bill perfectly."
