  • 3 tablespoons olive oil
  • 4 onions, chopped
  • 2 pounds / 1 kg minced beef
  • 2 cloves of garlic, chopped
  • 2 cans (14 oz / 400 g each) tomatoes
  • 2-4 red chilies, chopped
  • 1 red sweet pepper, chopped
  • 4 teaspoons ground cumin
  • ½ teaspoon ground pepper
  • 2 teaspoons oregano
  • 2 bay leaves
  • 2-3 teaspoons salt
  • 1-2 cans (14 oz / 400 g each) beans, drained
  • 2 oz (60 g) bittersweet chocolate
  • Cheddar cheese for garnishing (optional)

  • 1/2 cup butter, softened (you could also replace some butter with an equal amount of bacon grease)

  • 3 teaspoons all-purpose flour
  • 1 cup fish broth
  • 6 teaspoons fresh lemon juice (unsweetened)
  • 2 oz (60 g) white chocolate (not too sweet)
  • 1 tablespoon fresh, green pepper corns (optional)
  • 2 tablespoons butter
  • 2 pounds (1 kg) filet of salmon cut into 4-5 oz (120-150 g) portions
  • Salt and pepper

Chocolate Pâté with Crème Chaud-Froid - from Sprinkle Bakes

  • For the crème chaud-froid
  • 1/2 cup heavy cream
  • 3 tbsp sugar
  • 2 tbsp creme de cacao or 1 tsp vanilla extract
  • 2 tbsp cold water
  • 2 tsp powdered gelatin
  • For the chocolate mousse:
  • 1/4 oz. package of powdered gelatin (about 2 tsp)
  • 2 tbsp cold water
  • 3 egg yolks
  • 1/2 cup sugar
  • 1/2 cup milk, hot - (put in the microwave for 30+ seconds)
  • 8 oz high quality chocolate, chopped
  • 1 1/2 cups whipping cream

Cauliflower Chocolate Cake - from Chocolate-Covered Katie

  • 3/4 cup spelt flour or white flour or Arrowhead Mills gf (120g)
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 cup unsweetened cocoa powder (20g)
  • 2 tsp ener-g powder, or 2 tbsp ground flax. You can omit; the cake just won’t rise as much.
  • 1/3 cup xylitol or sugar (64g)
  • 1/8 tsp uncut stevia or 4 nunaturals packets (or 1/4 cup more sugar)
  • 1/2 to 1 cup mini chocolate chips (60-120g) (Do not omit. The recipe just won’t be the same if you do.)
  • 1 tbsp pure vanilla extract
  • 2 loosely-packed cups frozen cauliflower, thawed completely but not cooked (250g) (Or omit and sub 1 cup canned pumpkin, if cauliflower is too weird for you. I might even like the pumpkin version better!)
  • 1/2 cup milk of choice. For pumpkin version, use just 1/3 cup milk (or 1/2 cup if omitting oil).
  • 3 tbsp oil (or omit and increase milk to scant 2/3 cup, for a lower-fat option)

Savoury Chocolate BBQ Sauce - from The Yellow Cap

  • 1 tablespoon butter, soft
  • 4 garlic cloves, minced
  • ½ onion, small dice
  • 2 tomatoes, stem removed, small dice
  • 50 g dark brown sugar
  • 1/2 teaspoon chili powder
  • 120 ml apple cider vinegar
  • 240 ml barbeque sauce
  • 415 ml vegetable stock
  • ¼ teaspoon cumin, ground
  • ¼ teaspoon cinnamon, ground
  • 1 ml cloves, ground
  • 60 g 82% dark chocolate (Lindt or Beyers)
  • 2 tablespoons cilantro, fresh, chopped – if you cannot find cilantro, use celery leaves instead.
  • ¾ teaspoon salt
  • ½ teaspoon pepper, fresh ground
