Social media star Joe Wicks AKA TheBody Coach is a breath of fresh air to the world of diet and nutrition. In his This Morning debut he'll be showing us all how easy it is to get Lean In 15 with his Mexican Steak Salad with rice and pulses.
400g sirloin steak
Freshly ground black pepper
1 tbsp of coconut oil
200g tenderstem broccoli
1 packet of microwaveable rice
1 red chilli, sliced
1 yellow and red pepper, chopped
Large handful of juicy tomatoes
½ Cucumber, chopped
Large handful of coriander, chopped
1 tbs balsamic vinegar
Put the sirloin steak, into cling film and whack it with a rolling pin until the steak is nice and thin. Add ground pepper to both sides of the steak.
Heat the coconut oil in a pan until it’s melted.
Place steak in the pan and grill until cooked - about 3 minutes each side for a medium steak.
Add the broccoli to the frying pan along with the steak and let it cook for a couple of
minutes. Once the steak is done, take it out and rest it on the side until needed.
Take the rice and microwave following the packet instructions.
Meanwhile prepare the salad: Slice the chilli, chop the peppers into thin slices, chop
the tomatoes and cucumber into quarters, roughly chop the cooked tender stem broccoli. Place all the salad veg into a large bowl along with the cooked rice.
Add to the salad and stir through freshly chopped coriander and 1 tbsp balsamic
Slice the steak and place it over the top of the rice and salad. Throw a bit more
coriander over the top and serve!
