In our brand new series Life on a Plate, former Celebrity MasterChef winner Jayne Middlemiss meets with famous faces to discover their favourite dishes. This week, Jayne Middlemiss has a hot celebrity dinner date and a trip down culinary memory lane with McFly's Harry Judd!
Harry and Emma Judd's Spaghetti Bolognese
3 tbsp olive oil
1 large onion, finely diced
3 garlic cloves, crushed
200g smoked bacon lardons or pancetta
500g good quality beef mince
1 red or green pepper, cut into 1 cm chunks
2 x 400g cans chopped tomatoes
2 tbsp tomato puree
1 tbsp soft dark brown sugar
1 tbsp mixed herbs (or to taste)
1 tbsp sweet smoked paprika (or to taste)
2 tsp dried chilli flakes (or to taste)
200ml cider or red wine
500g dried spaghetti
flaked sea salt
freshly ground black pepper
freshly grated emmental cheese
Heat the oil in a large non-stick saucepan or a casserole pot and add the onion. Cook over a low heat for 10 minutes until the onion is soft, stirring regularly. Add the garlic and cook for a further minute.
Increase the heat and add the bacon lardons or pancetta and cook for 3-4 minutes or until the bacon has started to caramelise. Next add the mince, using a wooden spoon to break it up as it browns.
Cook for 5 minutes or until the mince has cooked through before adding the chopped pepper to the pan together tinned tomatoes, tomato puree and sugar.
Bring the sauce to a gentle simmer and add a little of the mixed herbs, sweet smoked paprika and dried chilli flakes. Taste after adding each one and adjust accordingly.
Pour in the cider or red wine and season well with salt and freshly ground black pepper. Bring back to a simmer and leave to gently bubble away for 30 minutes.
Whilst the sauce is cooking, place a large pan of salted water over a high heat. Once the water is boiling add the pasta and cook for 10–12 minutes or until al dente.
Drain in a colander and divide between pasta bowls. Spoon over generous spoonfuls of bolognese and top with the grated cheese.
