This tasty relish can be tried with Rustie Lee's Caribbean Vince burgers.
250g can of sweetcorn
½ pt white cider vinegar
3 dsp sugar
1/2 tsp turmeric
½ medium Onion, finely chopped
¼ red peppers
¼ green peppers
1 small chilli, chopped
1 dsp chopped fresh ginger
1 tsp salt
1 dsp corn flour
3 tbsp cold water to mix with the corn flour
1. Pour the vinegar into a saucepan and add the sugar and salt. Place the mixture onto a medium heat and dissolve the mixture by stirring with a wooden spoon.
2. Add the onions, peppers and ginger and cook for approximately four minutes.
3. Add the turmeric and the drained sweetcorn and cook for a further 3-4 minutes.
4. Mix the corn flour with the water and add to the relish mixture cook for 2-3 minutes.
5. Serve hot or cold.
