Serves 4
Ingredients:
4 sirloin steaks (thinly sliced, approximately 120g each)
100ml white wine
100g Gorgonzola (cut into small cubes)
1 tbsp of olive oil
30g salted butter
1 tablespoon of pink peppercorns
Salt, to taste
Method:
1. In a large non-stick frying pan, melt the butter with the oil and on a high heat cook the steaks with the peppercorn for 1 minute on each side. Do not season with salt.
2. Once ready, place the steaks on a plate and cover with foil to keep them warm. Leave the peppercorns in the frying pan.
3. Pour the wine in the same frying pan that you cooked the steaks and leave to sizzle on a high heat for 1 minute. Stir with a wooden spoon.
4. Lower the heat to medium and add the gorgonzola cheese to the frying pan. Stir constantly with a wooden spoon for 2 minutes allowing the cheese to melt and create a smooth sauce.
5. Once ready, place 1 steak in the middle of each serving plate and drizzle over the gorgonzola and peppercorn sauce.
6. Serve immediately.
