Speedy family food: Cheat's pizza and beef bolognese
Never one to shy away from a strong opinion, Gino D’Acampo sparked a social media storm yesterday after claiming that fussy children are the result of 'stupid parents'.
While some agreed with his comments, others fumed. But wherever you stand on the debate, one thing’s clear - many of you battle with your children every mealtime.
Mum and chef Michela Chiappa's speedy cheat's pizza and beef bolognese with hidden vegetables are guaranteed to transform your children from fussy to foodies.
Speedy cheat's pizza
This speedy cheats pizza is the perfect snack or meal to quickly throw together in under five mins for any hungry child or adult. It's perfect to get the kids involved too and they have so much fun picking out the toppings they want that they gobble it down.
4 white or wholegrain bagels
100g mozzarella cheese
a variety of toppings, e.g. mushrooms, onions, leftover cooked meat
1 x 400g tin tomatoes
1 teaspoon dried oregano
a little extra virgin olive oil
TURN on the grill to180°C/gas 4. SLICE the bagels in half,horizontally. PLACE them on a baking tray, cut side up, and place under the grill for 5 minutes. BLEND the tomatoes with the oregano and a splash of olive oil. SPREAD a thin layer of tomato sauce over the toasted bagels. TOP with cheese and your desired toppings. GRILL for 2–3 minutes, or until the cheese is golden brown. SPRINKLE the top with a little salt(for toddlers and adults).
Beef Bolognese with hidden vegetables
This beef bolognese with hidden vegetables has to be one of my favourite recipes for feeding everyone from baby to family. By roasting the veggies in the oven, it literally ties a busy parent to the kitchen counter for less than 10 minutes leaving you plenty of precious time to catch up on all those other chores. Just let the bubbling pan do the hard work! Plus it is packed with hidden veggies for children to enjoy.
1 stick of celery
1 large uncooked beetroot (washed)
500g mince beef
1 red onion chopped in half
1 clove garlic
1 tin chopped tomatoes
500ml boiling water
PREHEAT your oven at 180. PLACE your carrot, celery, onion and beetroot on a baking tray and drizzle with olive oil. PLACE in the oven for approximately 45mins to 1 hour until all the vegetables are roasted. HEAT in a large pan a little olive oil and once hot add the whole clove of garlic for a couple of minutes. ADD the mince and once the meat is all brown, add the tin of tomatoes and water bring to the boil and then leave to simmer on a gentle heat for approximately 1 hour (around the time the vegetables are done). PUT the vegetables in a bowl once ready and blitz them with a handheld blender. Then add them to the saucepan with the mincemeat. REMOVE the whole clove of garlic. REMOVE a portion for the baby and then season for the rest of the family with salt and pepper.
