Tameka Empson is back in the This Morning kitchen and makes her tasty veggie burgers with gherkin mayonnaise.
Mini burger buns
1. In a hot, oiled frying pan fry all of the onions and garlic until softened. Add the paprika and jerk paste and mix well. After a few minutes add the watercress, spinach and rocket, and mix well. Once cooked, remove from the heat and allow to cool.
2. Drain the chickpeas and put them in a food processor along with the peppers, breadcrumbs, and the cooled onion mix. Remove from the food processor and add two eggs to the mix. Mix well until combined.
