Try these healthy scrambled eggs with peppers and tomatoes - a perfect winter breakfast.
2 eggs, medium
1/2 red pepper, medium
1/2 spring onion
1 tomato, medium
1. Dice up your tomatoes and pepper and slice your spring onion and set to one side.
2. In a bowl, whisk the eggs with a little sea salt and pepper.
3. Put a splash of oil into a preheated non-stick frying pan and add your egg mixture to it. Constantly move the mixture around while the egg cooks, adding in your tomatoes, spring onions and peppers about half way through.
4. When the scrambled egg is fully cooked serve on a plate.
