Homemade Garlic Bread
Serves 4
200g Self Raising flour
1 tsp baking powder
200g natural yoghurt
½ tsp dried oregano
½ salt
A little oil
75g butter
2 cloves garlic
Handful flat-leaf parsley
1 tsp sea salt
½ tsp ground cayenne pepper
Place the flour, baking powder, yoghurt, oregano and salt in a mixing bowl. Mix together to form a soft sticky dough.
Turn the dough out onto a lightly floured surface and knead gently for 30 seconds.Divide into 2 and roll each piece into a circle around 5mm thick and approximately 24cm.
Heat a large non stick pan over a high heat. Place a little oil on kitchen paper and wipe the pan to lightly grease it.
Cook the flatbreads in batches for 2-3 minutes each side. Wrap in a clean tea towel to keep warm.
Melt the butter in a small saucepan. Grate the cloves of garlic and roughly chop the parsley.
Remove the melted butter from the hob. Add the garlic and parsley. Spoon the garlic butter over the flatbreads and dust with cayenne pepper.
Serve immediately.
