The Veggie Hero Burger

INGREDIENTS

1 tbsp vegetable oil, plus extra for frying burgers

2 garlic cloves, grated

4 spring onions, snipped finely with scissors

1 small courgette (about 200g), grated

2 large carrots, grated

10 small mushrooms (about 100g), torn as finely as possible

¼ bunch of parsley leaves, snipped finely with scissors

2 large handfuls grated cheddar (about 150g)

10 tbsp breadcrumbs

1 tin chickpeas, drained, crushed with a fork

Build your burgers with: 6 burger buns, 2 tomatoes, sliced, 6lettuce leaves, ketchup, mustard

Method

1.     Heat 1 tbsp of the oil in a frying pan on a medium heat and cook the garlic, spring onion, courgette, carrot, mushroom and parsley with a pinch of seasoning until soft, stirring regularly, about 5 minutes.  Set aside to cool.

2.     Mix together the fried veg, cheese, breadcrumbs and chickpeas with a little seasoning until well combined.  Form into 6 burger-sized patties and if you can, pop into the fridge for about 30 minutes, to firm up.

3.     Heat the remaining vegetable oil in a frying pan, on a medium heat and cook the patties (you may need to do this in batches) for about 2-3 minutes on each side until golden and cooked through.

4.     Build the burgers with the remaining ingredients, and any more you fancy!
