Vegan Healthy Banana French Toast

Serves 2

French Toast

  • 1 ripe banana

  • 250ml unsweetened almond milk

  • ½ tsp vanilla extract

  • ¼ tsp ground nutmeg

  • ½ tsp ground cinnamon

  • 1½ tbsp plain flour

  • Pinch sea salt

  • 1 tsp maple syrup

  • 4 slices wholewheat bread

  • Berry Syrup

  • 400g mixed frozen berries

  • 4 tbsp water

  • 1  tbsp maple syrup

To Serve

  • 1 small banana

  • 4 tbsp plain plant-based yoghurt

  • 10-12 fresh berries

  • 1 tbsp coconut flakes

Oven preheated to 180*C | Wide, shallow bowl | Baking tray lined with parchment | Small saucepan

First, make the French Toast | Peel and mash the banana in a wide, shallow bowl | Add the almond milk, vanilla extract, nutmeg, cinnamon, flour, salt and maple syrup to the bowl and mix well to combine | Dip the bread in the mixture, leave for 15 seconds then turn and repeat, so the mixture soaks into the slices | Repeat if necessary to get a really good soaked bread | Lay the bread out on the baking tray, put the tray in the oven and bake for 30 minutes until golden, turning halfway through.

Now, make the Berry Syrup | Put a small pan on a medium heat | Add the berries, water and maple syrup and simmer for 15-20 minutes until most of the liquid has reduced | Halfway through cooking gently mash the fruit with the back of a spoon and stir regularly.

Time to serve | Peel and slice the remaining banana | Plate up the toast, top with the syrup, the banana slices, yoghurt, fresh berries, coconut flakes and serve.
