Cecilia's panzanella salad

For 4 people
200g of stale bread4 ripe tomatoes1 cucumber1 red onion10 leaves of fresh basilExtra virgin olive oilRed wine vinegarSalt and black pepper
Cut the bread into about 1cm square chunks. Heat a tablespoon of olive oil in a pan and add the bread, let it fry at medium heat till brown and crispy - remove from the heat and leave to one side.
Chop the tomatoes and cucumber into about 1cm square chunks, thinly slice the onion, and place in a bowl. Tear in the basil leaves. Add the cubes of bread mix, drizzle with olive oil and some vinegar to taste add salt and pepper and mix again.
Leave to rest for about half an hour in the fridge before serving.
