Cecilia's panzanella salad

Cecilia opens up her kitchen to guests from all over the world when they are visiting Florence. Here she shares with us her delicious panzanella salad recipe.

For 4 people


200g of stale bread4 ripe tomatoes1 cucumber1 red onion10 leaves of fresh basilExtra virgin olive oilRed wine vinegarSalt and black pepper


  • Cut the bread into about 1cm square chunks. Heat a tablespoon of olive oil in a pan and add the bread, let it fry at medium heat till brown and crispy - remove from the heat and leave to one side.

  • Chop the tomatoes and cucumber into about 1cm square chunks, thinly slice the onion, and place in a bowl. Tear in the basil leaves. Add the cubes of bread mix, drizzle with olive oil and some vinegar to taste add salt and pepper and mix again.

  • Leave to rest for about half an hour in the fridge before serving.
