This one really is about using your imagination and going for it. There are no hard rules and anyone can do it!
Serves 4 as a fun dessert
150g dark chocolate
150g white chocolate
2 tbsp pink peppercorns, roughly bashed up
A few mint leaves finely sliced
Finely chopped hazelnuts
12 amaretti biscuits, crushed in your hands
Assortment of prepped fruits, we used:
Peaches, halved and de-stoned
Chunks of fresh coconut
Mango, peeled and cut lengthwise into large chunks
1) Melt both chocolate separately. This can be done either in two bain-maries or, alternatively, and more easily in the microwave. Just be sure to hit the chocolate with 20 second bursts of power.
2) The best way to approach the next bit is to prepare all your ingredients in front of you and then just hit them with the fruit. Combos that work very well, and that we did on screen: Peaches, dipped one side in white chocolate and then sprinkled with mint and pink peppercorns. Strawberries dipped in dark chocolate sprinkles with a combination of chilli flakes, hazelnuts, amaretti. Figs in dark chocolate with amaretti and chilli. Coconut with dark chocolate and amaretti. Mango with white chocolate and pink peppercorns and mint.
3) Then pop in the fridge for about 20 minutes to cool and serve with your favourite Italian red wine!
