This is the ultimate comfort food... A roast vegetable piadina, and a cheese and ham piadina. Beautiful.
Large bunch of basil
2 cloves of garlic
60g pine nuts
100g pecorino, grated
Extra virgin olive oil
2 piadina breads
3-4 tbsp mayonnaise
1 small bunch of asparagus, trimmed and griddled
Half courgette, sliced length-ways, trimmed and griddled
2 slices of griddled aubergine
Slices of local ham – mortadella, parma or breasola
1 ball of scamorza or smoked mozzarella
Rocket to serve
1) Finely chop the basil, garlic, and pine nuts. Drop into a bowl, add a good glug of olive oil, the grated cheese and mix together well. Keep the pesto to one side.
2) Briefly warm the piadinas in a dry pan over a medium heat.
3) Cut the breads in half. Mix about 4 tbsp of the pesto with the mayonnaise and then spread on the cut side of the breads. Lay up one piece of bread with the griddled asparagus, courgette and aubergine, drizzle with pesto and put the remaining top on.
4) For the second sandwich, pile up a generous amount of ham on the base piece of bread then top with slices of peeled scamorza. Finish with a fistful of rocket and a final drizzle of pesto. Push the top on.
