Lorraine Pascale's quinoa with raisins, walnuts and parsley

I’m a great lover of batch making, especially when you want to be healthy, so this recipe is easy for on the go lunches and lasts in the fridge for 2-3 days

Ingredients:

250g quinoa50g walnuts or pine nuts (chopped)75g raisinsJuice of 1 lemon1 tsp olive oilHalf bunch of fresh parsleySalt and pepper for seasoning

Method:

  • Cook the quinoa according to packet instructions. NB you can also use couscous if you prefer.

  • Put the walnuts or pine nuts in a small frying pan. Don’t add any oil. Toast the nuts for 3-4 minutes or until golden brown.

  • Once the quinoa is cooked, drain it really well and mix it with the nuts. Add the raisins and the lemon juice.

  • Season to your own taste with salt and pepper
