American recipes: Ribs & wings
Try this classic American recipe.
Serves: 4-6
Ingredients2kg of Pork Belly Spare Ribs a good inch thick200mls Oyster sauce200mls Dark Soy Sauce200gr Soft Brown Sugar200mls Shao Shing wine (or use sherry)Water to cover meat100gr hunk of Ginger (sliced, skin left on)2 cloves of Garlic4-8 Star Anise (Optional)1 Stick Cinnamon12 chicken wings
Method
Add equal quantities of shao shing wine, dark soy sauce and oyster sauce to pan. (You can use a mug to measure these out.)
Add cinnamon stick, star anise, salt, ginger and garlic.
Cut the pork to create individual pork ribs and put into the pan, topping up with water so that the meat is covered. Simmer gently for 1 hour.
After 1 hour put the chicken wings into the pan and cook for a further 10 minutes.
Remove the ribs and wings from the liquid and leave on the heat until the liquid reduces to resemble a sticky sauce.
Put a griddle pan on a high heat and char the wings and ribs for around 10 minutes to add some colour, turning halfway through. Add a little more sauce to them while they’re cooking if needed. As soon as they look nice and glazed, then they’re ready to go.
Serve with extra sauce.
