Barbecue week: Apple crumble

You can’t beat a lovely apple crumble and Lisa’s recipe is certain to tempt taste buds.

Ingredients150g plain flour125g chilled butter, cubed, plus extra for greasing3 tbsp demerara sugar100g oat granola50g chopped almonds, toasted50g chopped pecans, toasted50g chopped hazelnuts, toasted

For the filling500g Bramley apples500g Braeburn applesJuice half a lemon50g caster sugarTablespoon of butterA couple tsps of vanilla extract

To serveCustard, cream or vanilla ice cream (or all three!)


  • Preheat the oven to 200C.

  • Combine the flour and butter in a large bowl then rub together with your fingertips until the mixture resembles fine breadcrumbs.

  • Stir in the sugar, granola and chopped nuts and set aside.

  • Peel and core the apples, cut into wedges then toss with the lemon juice in a large bowl. Stir in the butter and vanilla extract.

  • Sprinkle the sugar over the apples, toss to coat, then tip into a buttered ovenproof dish.

  • Pile the topping on top of the apples then shake out to an even layer- don’t press down.

  • Bake for 30-40 minutes until the topping is golden and the filling is bubbling up round the edges.

  • Leave to stand for a few minutes before serving.
