Barbecue week: Steak with onions, pineapple & fried egg
A barbecue favourite, John gives a masterclass in cooking the perfect steak.
Serves 2 as a main meal or 4 sharing
IngredientsSteak2 thickly sliced sirloin steaks30mls vegetable oil1tsp salt and some cracked pepper
Sides3 onions sliced in rings1 tin of pineapple rings1 egg
Method
Heat the BBQ or the griddle pan.
To prepare the meat, score the fat all the way to the flesh so the fat and sinew shrink but the meat does not.
Next, oil the meat, not the pan. Season. If you don’t season after oiling rather than before, then salt will draw moisture out of the meat.
Place the meat straight down onto a hot pan and leave - do not move.
Cook for 3 - 4mins each side.
Put the onions into the same pan, turning often.
Take the steak off the heat and leave it to rest for at least 10 minutes before carving.
Once the onions have softened, add a splash of pineapple juice and put to one side of the pan. Now add some pineapple slices and cook on each side for 2 minutes.
Fry an egg in a hot pan and serve.
