Barbecue week: Steak with onions, pineapple & fried egg

A barbecue favourite, John gives a masterclass in cooking the perfect steak.

Serves 2 as a main meal or 4 sharing

IngredientsSteak2 thickly sliced sirloin steaks30mls vegetable oil1tsp salt and some cracked pepper

Sides3 onions sliced in rings1 tin of pineapple rings1 egg

Method

  • Heat the BBQ or the griddle pan.

  • To prepare the meat, score the fat all the way to the flesh so the fat and sinew shrink but the meat does not.

  • Next, oil the meat, not the pan. Season. If you don’t season after oiling rather than before, then salt will draw moisture out of the meat.

  • Place the meat straight down onto a hot pan and leave - do not move.

  • Cook for 3 - 4mins each side.

  • Put the onions into the same pan, turning often.

  • Take the steak off the heat and leave it to rest for at least 10 minutes before carving.

  • Once the onions have softened, add a splash of pineapple juice and put to one side of the pan. Now add some pineapple slices and cook on each side for 2 minutes.

  • Fry an egg in a hot pan and serve.
