Barbecue week: Whole tomatoes smashed on toast

Simple and scrumptious springs to mind for this smashed tomato on toast recipe. Cook the tomatoes on coals for a gorgeous and flavoursome snack.

Ingredients6 tomatoes6 slices of breadSome olive oilSalt and pepper

Method1. If you are cooking over coals, simply put the whole tomatoes in the coals and leave for 10 minutes until about to pop. To cook inside, cook for a couple of minutes on the flame of your stove, until they start to blacken. Transfer to oven for 10 mins until soft.

  • Whilst they cook, toast the bread.

  • Take the tomatoes and squash onto the bread.

  • Pour over some olive oil and season with salt and pepper and a few pieces of fresh chilli.
