Cheat’s veggie moussaka
Lisa's cheat's moussaka is much less work than the traditional version. Packed with Quorn mince and veggies, it's the comfort food we all need in our lives.
2-3 auberginesSplash of olive oil1 large onion, chopped1 cloves garlic1 tsp gd cinnamon1 tspn gd cumin2 tins chopped tomatoesTeaspoon of sugar350g Quorn mince 300g greek natural yogurt100g feta cheese1 tsp Dijon mustard1 egg
Preheat oven to 180C.
Slice the aubergine lengthways and rub in a little olive oil, salt and pepper. Bake for about 20 minutes.
Heat a little olive oil in a large frying pan and soften the onions for 5-10 minutes.
Grate in the garlic and cook a few minutes before adding cinnamon, cumin and a splash of water. Cook out for a few minutes.
Add the tomatoes and a teaspoon of sugar before then adding the Quorn.
Bring to the boil and simmer for about half an hour.
For your topping, whisk together the egg, yogurt, mustard and cheese.
In an ovenproof dish, add a layer of tomato sauce, followed by a layer of cooked aubergines and repeat.
Top with the yogurt mix and bake for between 30-40 minutes until golden and puffed up.
