French Toast Muffins with Frozen Berries and White Chocolate

It's time to make French Toast even more delicious with Lisa's easy berry and white chocolate muffins. They're a great way to kick off the weekend!

Makes 12 muffins


3 eggs

375ml milk

75g sugar

50g white choc chips or white chocolate

8-10 slices of white or brown bread

200g frozen berries

A little icing sugar


  • Preheat the oven to 190C.

  • Whisk together the eggs, milk, sugar.

  • Cut the bread into cubes and add to the mixture, then stir in the fruit and chocolate.

  • Divide evenly into greased muffin tins.

  • Bake for 25 minutes.

  • Once cooled, dust with icing sugar.
