Hot dog and caramelised onion mac and cheese

Hot dog and caramelised onion mac and cheese
Serves 2
Ingredients
2 large brown onions, sliced
300g macaroni
50g butter
50g plain flour
500ml cold milk
1 tsp mustard powder
100g dijon mustard
½ vegetarian stock cube
300g grated cheese (any leftover cheese e.g. Cheddar)
A good splash of Worcester sauce (or vegetarian alternative)
65g panko breadcrumbs
1 packet of bocconcini
8 frankfurters, vegetarian or regular
A good squirt of mayonnaise, tomato ketchup and English mustard, to serve
6 sub rolls
Method
1. Preheat the oven to 180c / 160 fan
2. For the caramelised onions, gently fry the onions in a knob of butter, plus a little vinegar and a little sugar, for between 20 - 30 minutes until very soft and golden brown. Set aside.
3. Meanwhile, cook the macaroni as per the packet instructions. Drain, reserving the pasta water.
4. In a saucepan, melt the butter until foaming then add the flour and cook over a low heat until white. This should take about 4 minutes. Then slowly add the milk little by little, continually whisking until smooth and lump free.
5. Add the veggie stock cube and stir through to allow it to dissolve.
6. Bring the mixture to a simmer and add the mustard powder, dijon mustard and Worcestershire sauce, if using.
7. Turn off the heat and then stir through the grated cheese, followed by the cooked macaroni. Add a splash of pasta water if the mix becomes a little thick.
8. Place the frankfurters in the base of an ovenproof dish, cutting them in half if too long.
9. Layer over the caramelised onions and then cover with the mac and cheese.
10. Top with bocconcini, panko breadcrumbs and a sprinkle more grated cheese, if desired.
11. Cook for 25-30 minutes until golden and bubbling.
12. When the mac is nearly ready squeeze a mixture of mustard, mayo and ketchup into the bread rolls.
13. Sandwich a spoonful or two of hot mac and cheese into the roll and then finish with more mustard and ketchup, if desired.
14. Delicious served with American style iced tea.
