Ice cream sandwiches

John's moreish ice cream sandwiches are the ultimate summertime treat, but are incredibly simple to make.


275 plain flour

150 icing sugar

225 cold cubed butter

1 egg yolk

Pinch salt

Handful of choc chips

Vanilla Ice Cream


  • Preheat the oven to 180c.

  • Mix flour, icing sugar and butter together, either in a mixer or with your hands, until it resembles breadcrumbs.

  • Add the egg yolk, salt and chocolate chips, before bringing together with your hands to form a dough.

  • Shape into a sausage and wrap in greaseproof paper. Put in the freezer for at least 30 minutes.

  • Slice into cookies, add to a greased, lined baking tray and bake for 12-15 minutes.

  • Once the cookies have cooled, sandwich them with ice cream.
