Tinned lychee and lime granita
If you've never tried tinned lychees - give them a go in this light and refreshing granita. It's the perfect treat on any hot summer day.
1 tin of lychees in syrup
1tsp vanilla extract
1 ½ tbsp drinking coconut milk
40g fresh ginger
2 limes, juiced
Fresh berries, tinned peaches, tinned mangoes
Add the lychees and their syrup to a blender, reserving a little of the syrup in a small bowl.
Grate the ginger into the small bowl, combine with the syrup and then add to the blender along with the vanilla, coconut milk, and lime juice. Puree until smooth.
Pour the mix into a plastic container and freeze for a few hours.
Take the container from the freezer and use a fork to break up the mixture into crystals.
Put back in the freezer for a few more hours and then run a fork through it again.
Layer the granita with fresh berries, tinned peaches and tinned mangoes.
