Tinned lychee and lime granita

If you've never tried tinned lychees - give them a go in this light and refreshing granita. It's the perfect treat on any hot summer day.

Serves 4


1 tin of lychees in syrup

1tsp vanilla extract

1 ½ tbsp drinking coconut milk

40g fresh ginger

2 limes, juiced

Fresh berries, tinned peaches, tinned mangoes


  • Add the lychees and their syrup to a blender, reserving a little of the syrup in a small bowl.

  • Grate the ginger into the small bowl, combine with the syrup and then add to the blender along with the vanilla, coconut milk, and lime juice. Puree until smooth.

  • Pour the mix into a plastic container and freeze for a few hours.

  • Take the container from the freezer and use a fork to break up the mixture into crystals.

  • Put back in the freezer for a few more hours and then run a fork through it again.

  • Layer the granita with fresh berries, tinned peaches and tinned mangoes.
