Bring a pan of salted water to the boil and heat a large and small frying pan on a high heat.
Heat the olive oil in the large frying pan and add the garlic. Fry for 30 seconds, reducing the heat. Stir in the double cream and blue cheese. Stir until the cheese has melted. Add the spinach and allow to wilt.
Place the pine nuts in the small frying pan and lightly toast.
Place the gnocchi in the water and boil for 2 minutes or until they start to rise to the surface. Once cooked , drain and add to the sauce.
Serve in a warm bowl, topped with a few pine nuts.
