You'll have everyone round the table enjoying their sprouts with this recipe
1kg Brussels sprouts
a drizzle of oil
2 banana shallots, sliced
juice and zest of a lemon
a handful of flaked almonds
salt and pepper
Peel the outer leaves from the sprouts if they are not clean or have blemishes and chop into halves or quarters if they are big. Parboil in salted water for 2-3 minutes then drain and cool – this can be done in advance.
Heat a large frying pan with the oil and add the shallots. Fry for a minute or 2 then add in the sprouts, toss frequently and cook for about 3-4 minutes until they are golden and softened but still retaining a little bite. Add in the lemon juice, zest and the almonds and a final glug of oil before serving.
