10 basil leaves
2 tbsp extra virgin olive oil
1 tbsp olive oil
1 granny smith apple , cored
1 large beef tomatoes
1 ball of mozzarella
A block of parmesan
Salt and pepper
Finely chop the basil then place it in a bowl, cover with olive oil and season with salt and pepper. Leave to stand to infuse.
Heat a large frying pan over a high heat.
Core the apple, then cut 2 x 1⁄2 cm thick slices (discs) from the tomato, apple and mozzarella.
Add the olive oil and butter to the pan then fry the tomato and apple for 30 seconds on each side, seasoning both sides of the tomato with a little salt and pepper and the apple with just pepper. Remove from the pan and place on a tray.
Place a disc of apple in the middle of a plate then top with some parmesan shavings, top this with a disc of tomatoes, then a piece of mozzarella. Repeat this pattern once more finishing with mozzarella. Once the stack is complete, drizzle over some of the basil infused olive oil and serve.
