Coleen's tasty vegan tacos
Welcome back to Coleen’s kitchen kingdom. Col has been teaching us some of her favourite vegan dishes, with help from her daughter Ciara as sous chef.
Coleen's tasty tacos, vegan styleServes 4Taco Filling:400g can chickpeas (or beans of your choice)1 red onion, sliced into small wedges1 red pepper, sliced10 cherry tomatoes, halved2 tbsp taco seasoning1 tbsp olive oilTo serve:4 hard taco shells1 little gem lettuce, shredded1 ripe avocado, chopped - check this**Tomato salsaVegan ‘creme fraiche’ alternative (optional)Lime wedges
Preheat the oven to 220C/gas 7.
Taco filling: Drain and pat the chickpeas dry. Place them in a bowl and lightly smash them, leaving a few whole chickpeas. Put them on a baking tray with the onion, pepper and tomatoes.
Add the taco seasoning and olive oil and toss everything together. Bake for 10 minutes, remove from the oven and lightly shake the tray to turn. Return to the oven and cook for a further 10 minutes. You can also cook the taco filling in a frying pan.
Place the taco shells on a baking tray and add to the oven for the last 3 minutes.
To serve: Fill the taco shells with lettuce, a few spoonfuls of the chickpea mixture and top each with avocado, tomato salsa, vegan ‘creme fraiche’ alternative (if using) and a wedge of lime. Serve with grilled courgette, lemon, garlic, and mint on the side if liked.
